The Great Fairies return in The Legend of Zelda: Tears of the Kingdom, and they're just boisterous as ever. You will find quite a few through different quests and exploration around the world.
You will find one as part of the Potential Princess Sightings quest, which will give you the Serenade To A Great Fairy quest. It involves bringing entertainment to a Great Fairy who has hidden away.

Start Serenade To A Great Fairy
You can start this quest by speaking with Penn at the Woodland Stable east of Hyrule Castle and Lookout Landing. Here, speak with Penn, and he will tell you all the gossip he has heard at this stable and how there is a Great Fairy nearby who is in need of some help after she has hidden away.
Complete Serenade To A Great Fairy
Speak with the nearby musicians whose cart has broken down and are lamenting their need to play for the nearby Great Fairy. This means it is up to you to repair their cart, and luckily, you have everything you need to repair it nearby.
It's only missing a couple of wheels, and these can be found in a stable nearby, so pick them up with Ultrahand and attach them to the cart. Now, speak with the musicians again, and they will get in the wagon.
The only issue is that they don't have a horse or anything to pull the cart up the hill to the Great Fairy, so this means you need to use your own. If you already have one, you can use the stable to take it out or find a wild horse in the fields close by. Either way, you also will need a harness, which you can unlock by getting to the first level with Pony Points.
Once you have the horse and a harness attached, walk it over to the wagon and attach the harness. Now, lead the wagon up the hill to the Great Fairy Fountain. You will know it's a fountain immediately, as it's just a giant flower coming out of the ground.
Once you bring the wagon to the fountain, you can watch as the musicians play for the Great Fairy and help bring her out of the flower. With that, you will be given some Rupees and will be able to speak with the Great Fairy to learn more about what has happened with Princess Zelda. With that, the quest is done.
